"The Bergader Dairy" - established in 1902 - has been in the same family for over 100 years and is located in the pristine mountain region, the famous Chiemgau in Bavaria, Germany. Bergader has grown into one of the leading dairies in Germany. Yet still today, Bergader's company philosophy is "good cheese is made by heart and hand, not by technology". Only the finest cows milk from the surrounding alpine region of the Chiemgau and Berchtesgaden, famous for its clean, pure air and untouched, preserved land is good enough for Bergader's cheese specialties, such as Bavaria Blu and the Bonifaz line.

What does Bonifaz mean? The name Bonifatius dates back to the 7th Century. It means "good doer" or "man of good deeds" (boni=good; facere=to do, latin language), also "friend of peace" (old german language). A well-chosen name for a good cheese with integrity.

At the Bergader Dairy, the curd is still cut by hand.

 

Soft ripened cheeses



Bavaria Blu
This is the authentic triple crème soft ripened cheese creation with white and blue mold. Our unique white mold composition gives the white mold hugging each wheel a silky texture, which is perfectly complimented by the velvety, creamy blue veined interior. Bavaria Blue still ripens naturally as it did in the old days. Bavaria Blu becomes increasingly rich and buttery as it ripens with a complex, yet balanced blue cheese flavor.

 



Bonifaz pure & creamy
Triple crème soft ripened cheese with the balanced, clean aroma of fresh milk from the Bavarian Alpine Foothills. Firm when young, increasingly rich and creamy as it ripens naturally.

 

Bonifaz porcini chanterelle
Triple crème soft ripened cheese with wild porcini and chanterelle mushrooms. The earthy flavors of the mushrooms mingle happily with the velvety creaminess.

 

 

 

Bonifaz garlic & fine herbs
Triple crème soft ripened cheese with grassy notes of fresh cut garlic and herbs from your garden.

 

 

 

Bonifaz green peppercorn
